Maison Simonnet-Febvre’s storied history in Chablis dates back to 1840, when they were founded by Jean Febvre, Master Cooper in Montbard.

Originally founded as a traditional method specialist (and their crémants remain things of beauty – the only Crémant de Bourgogne still produced in Chablis) they now produce a wide range of wines expressing the various terroirs of Chablis. Owning vineyards right across Chablis, including Premier Cru Mont de Milieu and Grand Cru Preuses, Simonnet-Febvre’s portfolio represents a spectacular cross-section of this iconic region.

Since 2013, Simonnet-Febvre has also played a major role in reviving the forgotten vineyards of Coteaux de l’Auxois, buying 15 hectares of vineyard in the region and producing wines which revitalise this ancient style, lost since phylloxera and the world wars. The wines focus on emphasising distinct sense of place in the glass, with winemaking geared around elevating the personalities of each appellation.
