Wines have been grown on the soft chalk slopes of the South Downs around the Wiston Estate since Roman times, some 2,000 years ago.  The current winery was inspired Pip Goring’s arrival at the estate in 1972 and her dream to plant a vineyard that would evoke memories of her childhood in South Africa’s Western Cape. With the support of family and the perseverance of her Huguenot ancestors, Pip’s dream became a reality. In 2006, the Goring family planted a south-facing 16-acre site with Pinot Noir, Pinot Meunier and Chardonnay vines. In the same year, Harry and Pip’s son Richard moved back to the Estate with his wife, Kirsty. Having worked on small scale organic farms in western Canada, they brought with them the desire to invest for the long term in the soil and the community. Pip’s dream, which was as much about bringing people together as it was about making wine, has now become a reality and fifteen years after the vineyards were first planted the Wiston Estate’s team of growers and winemakers, which has doubled in size, has become a dynamic focal point for its ever-growing community.

The Wiston vineyards consistently produce exceptional fruit, and their winemaking philosophy is quite simply to guide it through the production process in as gentle a way possible, allowing the  maximum expression of purity. They press their grapes immediately after picking, extremely gently, and ferment and age the wines in barrel and in tank prior to bottling. They are then matured in the Wiston cellars for many years, where they are constantly monitored. Wiston’s approach is both patient and respectful; making great quality traditional method sparkling wine takes time and fastidious attention to detail.

Wiston’s cuvées, both Vintage and Non-Vintage, express an individuality of character and singular style with every release. They strive to reflect these unique personalities in each wine, respecting their heritage, composition and identities from year to year. Wiston have experimented broadly since their first vintage in 2008, resulting in a range of styles which showcase their wonderful terroirs at their very best. As a result, their wines are consistently championed as the best examples of their type in the UK.
