Simonnet-Febvre
The relationship between Maison Louis Latour and Simonnet-Febvre goes back a long way. After buying Château Corton Grancey in 1891 the Latours celebrated with the Simonnet-Febvre’s crémant. In 2003 the Latours bought the Domaine and have taken it from strength to strength.
Founded in 1847 as a crémant producer, Simonnet-Febvre still make outstanding sparkling wine – indeed they’re the only winery still making Crémant de Bourgogne in Chablis. But today their remit covers the whole breadth of Chablis, from Petit-Chablis to Grand Cru.
A true Chablis-lover’s Chablis maker, Simonnet’s wines are all about the steeliness and minerality that epitomises the region, but that classic Chablis skewer is always tempered by beautifully ripe fruit, hugely expressive of its terroir. Investment by the Latours means that winemaking is now undertaken at another level of technical expertise, studiously capturing purity of fruit and vineyard character.
Simonnet-Febvre have also explored forgotten vineyards beyond the fringe of Chablis, restoring the once-great Coteaux de l’Auxois, mostly abandoned during the wars, as well as producing Burgundy’s ‘secret’ Sauvignon Blanc, the deliciously mineral, lemon-scented Saint-Bris.
